I like fruity cakes - and I happen to work at a place where people don't eat a lot of plums, so they're always left behind on fridays. Rather than dooming them to the bin, I occiasionally take them home and bake with them.
This is a version of a recipe I found elsewhere, but didn't like. So I changed some stuff around and here you have it.
Ingredients
There are two parts to this recipe - a sponge and a topping.
For the sponge:

- 500g fresh plums
- 3 eggs
- 250g sugar
- 250g flour
- 2 dl yogurt
- 2 tsp baking powder
- cinnamon-sugar
For the topping:

- 100g sugar
- 100g flour
- 100g butter
Preparation
First make the dough.
Whisk the eggs and sugar intil they're pale yellow and thick

Whisk the eggs and the sugar until the sugar is dissolved and you have a thick, frothy, pale yellow substance
Add flour, yogurt, melted butter, and baking powder and mix thoroughly

Grease a springform with butter:

Add the dough, then arrange the halved and pitted plums on top and sprinkle cinnamon sugar over them:

Then prepare the crumble by mixing sugar, butter and flour together

Spread more or less evenly on top of the cake - my butter got too soft, so it turned out a bit messy:

Bake for ~45 minutes at 200°C

Let it cool off a bit before serving - with creme fraiche, whipped cream, or as it is :)
